Meat Muffin Mini Frittatas
Ingredients
Onion, diced
Bell Pepper, diced
Red Bell Pepper, diced
2 stalks Celery, diced
Ground turkey breast
8-10 eggs
Saute veggies in olive oil I season these with curry, salt and cayenne. Cook ground turkey. Once turkey is cooked through add veggies and cook for about 5 minutes. Set aside to cool for 15-20 minutes.
Preheat oven to 350. Have muffin pan greased with olive oil and a cookie sheet to set it on.
In a large bowl Mix eggs together, I take out half the yolks. Season eggs with salt and pepper. Stir in veggie, turkey mixture. Combine. I use a half cup measure to scoop into the muffin tin. Bake on cookie sheet 30 to 45 minutes, until eggs are set. Enjoy!
